The Goddess Aine and Her Midsummer Lavender Cookies

Honoring the goddess Aine.

Ingredients

2 cups butter
5 cups sugar
8 eggs
2 tsp vanilla
½ cup dried lavender, chopped finely
6 cups flour
4 tsp baking powder
sugar sprinkles (lavender colored)

Preheat oven to 350.

Cream together the butter, sugar, eggs and vanilla. Add dry ingredients except lavender. Mix well.

Add in the lavender and stir just until mixed well, do not overblend.

Drop the cookies (using a teaspoon) onto a cookie sheet. Space them about 3 inches apart as they will spread quite a bit.

Dust the cookies with the lavender colored sugar sprinkles. Place in oven and bake 10 – 12 minutes, or until the edges are lightly browned.

Remove from pan immediately and let cool.
