Mother Gaia's Healing Chicken Soup

Honoring the Greek goddess Gaia.

Mother Gaia's Healing Chicken Soup

The Ingredients: (You can also add rice or noodles as you like)

3-4 pieces of chicken (with bone and skin)
or a whole chicken that's been cut up

 8 cloves fresh garlic, chopped
1 medium onion, chopped
zest and juice of 2-3 lemons
3-4 Tablespoons dried oregano
2-3 carrots chopped
(or turnips, parsnips or any other root vegetable you like)
2-3 ribs of celery chopped
3-4 Tablespoons chopped parsley ( fresh or dried)

Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and cook for 1 hour.

While the chicken is cooking, peel and chop the garlic and set aside. To enhance its potency and antibacterial/antiviral effects, let the chopped garlic rest for 20-30 minutes before adding it to the soup.

Remove chicken from pot and let cool. Separate meat from the bone and skin and chop the meat coarsely. Strain the broth to get out the yucky bits, then return the meat and broth to the pot.

Add onion, lemon zest, oregano, garlic, vegetables, and rice or noodles and lower heat to simmer. Cook for another 30 - 40 minutes.

Add lemon juice and serve! Make plenty. Like the Great Goddess Gaia you can heal the planet with this primoridal soup!
